Let's get real! We all have bad thoughts about carbs as society made it out to be, but carbs are NOT our enemy! I love carbs for one! It's about time to break the stigma around carbs!


Carbs are our number 1 source of energy and they don't make us fat! Too much of anything can do that, that's why balance is key! Our bodies need carbs to function and to function well let me tell you that. Processed carbs have added preservatives and things we don't even know about, but what about the unprocessed carbs the Lord gave us, we MAY enjoy that, we MUST! And it tastes pretty good, to eat a carb with confidence, man oh man!



This is one of my favourite meals and I always have some kind of potato in my possession at home!

*QUICK FACT, when you boil, or steam any potato and let it cool down its GI decreases and it becomes a LOW GI carb. The Glycemic Index(GI) is a relative ranking of carbohydrate in foods according to how they affect blood glucose levels. Carbohydrates with a low GI value are more slowly digested, absorbed and metabolised and cause a lower and slower rise in blood glucose and, therefore usually, insulin levels. How cool is that? You can always just heat them up again in the microwave!

All types of potatoes are so good AND sweet AND filling! What a win, and not very high in cals at all!


To make this dish you'll need:

  • 1 sweet potato ( I love Kara Orange ones!)

  • Some greens, broccoli, or your desired green veg.

  • Cauliflower

  • Lean cooked mince

  • Smooth cottage cheese Fat Free





Instructions:

  1. Steam all the vegetables together until the sweet potato is soft on the inside, with its skin still hard enough to not come off. About +- 6 mins in the microwave on medium-high.

  2. Cut a thin top layer off the sweet potato.

  3. With a spoon, carve out the soft inside of your sweet p and fill it with 1 tablespoon of lean mince, add your broccoli and cauliflower.

  4. Top off your dish with some smooth cottage cheese, for extra protein and a healthy sauce.

  5. Enjoy your balanced meal, mindfully!

This recipe is only 128 calories with a medium-sized sweet potato!
