Fudgy Brownies

WELLNESS WEDNESDAY


If I think of the perfect brownie, I think sweet (not too sweet), moist, soft and topped with some kind of chocolate sauce. And this describes this fudgy brownie wellness recipe!


As you all know of our recipes are easy to make, for fudgy brownies you don't even need an oven! Only a frying pan, some cook and spray, an oven bowl and a spoon!

The best thing about this recipe is that it got created while I was trying to make something else, date squares! I added ingredients, mindfully and it turned into more a brownie texture and taste. So it's super original and made with nutritious ingredients, although I can think this baby might be high in calories, this is a treat! Treat yourself!



Ingredients:

  • 1 tbsp real butter

  • 1 cup chopped dates

  • 2 tbsp chocolate flavoured nut butter/any nut butter

  • 2 sachets choice of sweetener (xylitol, stevia, maple syrup etc.)

  • 2 tbsp unsweetened cocoa powder

  • 6 sugar-free digestive biscuits

  • 2 tbsp coconut oil

  • 1 cup cooked oats

  • choice of slab chocolate to melt for top layer ( I used roasted cocoa dark chocolate sugar-free)

  • dash of milk


Instructions:

  1. On medium heat bring the butter and dates to a frying pan. Mix well until butter is melted and dates begin to get sticky.

  2. Add a dash of milk and stir in.

  3. On low heat, add the choc nut butter, cocoa powder and sweetener of choice. Mix this batter well in an 8 shape. (Form an eight with the spoon while you're mixing)

  4. Add 1 of the 2 tbsp coconut oil and mix in.

  5. Now, add the unflavoured cooked oats and mix in well. Everything still on a low heat.

  6. Crumb the 6 biscuits with your fingers to tiny pieces into the batter.

  7. Mix in well and add this mix to a already sprayed oven bowl, square shape.

  8. Freeze for about 15 minutes.


For the top layer chocolate:

  1. Take your choice of choc slab and break it into smaller pieces.

  2. Bring the frying pan to a low heat and add the other tbsp of coconut oil.

  3. When the coconut oil is melted, add the chocolate pieces and mix well until the chocolate melts as well.

  4. Layer the top of the brownie mix with the melted chocolate and freeze again for about an hour.




  • You can always add some flaked almonds or your choice of nuts to the brownie batter for a nutty brownie!
